I don't know if it is Amish, but that sounds like a tail sauce. To make the sauce is simple: Ketchup + a good quality Horseradish = a nose-tingling tail sauce. It'd have to be up to you how much you want your nose to water on how much horseradish you add to the Ketchup. It is also imperative that the horseradish be a good quality horseradish, or else it won't be as nose-tingling.
